Classic California Pasta Salad
1/2 lb. fusilli or other spiral pasta
5 tbs. of olive oil
1/2 cup of freshly grated Parmesan cheese
3 cups of broccoli florets
3 garlic cloves, minced
1/4 tbs. of crushed red pepper flakes
1 cup halved cherry tomatoes
1/2 cup of pitted Kalamata olives
1/4 lb. prosciutto, chopped
3 tbs. chopped fresh basil
1/8 tbs. ground black pepper
1.) Cook pasta according to package directions. Toss with 2 tbs. of olive oil and the cheese in a large bowl.
2.) Sauté broccoli, garlic, and red pepper flakes in the remaining 3 tbs. of oil in a medium skillet over medium heat until broccoli is tender. , 6 to 8 minutes. Toss with pasta, tomatoes, olives, prosciutto, basil, and pepper.
