Born in the Fertile Crescent, cradle of Western
Civilization, fillo is one of our most ancient foods
and – paired with superb local fruits, vegetables,
fish or lean meat – became a staple of the
famed Mediterranean diet.

Every culture – from Greece to Armenia, Israel,
Turkey, Morocco and beyond – has its own delicious
sweet and savory variations on the theme.
Grandmothers traditionally taught younger
generations the fine art of making fillo…
it requires very few ingredient but a good deal of skill.

Today, however, you don’t need to go to all that trouble – who has the time?
